Culinary Improvisation

Jonathan Deutsch, assistant professor in the Department of Tourism and Hospitality/Center for Economic and Workforce Development, Kingsborough Community College, CUNY, will guide us through a discussion centered around culinary education and the training of chefs. Readings are the introduction and chapter six of his new book, Culinary Improvisation.

Here are some questions to consider while reading the chapters:

1. What are the challenges of teaching how to do?

2. What is the relationship between habit and critical thinking in the pedagogy of practice?

3. Designing games -- do you reverse-engineer from clear outcomes stated discretely?

4. What is the relationship between the time of games and the time of life?

5. Think about the role of error in learning.

6. What kind of reasoning is cooking and designing?
