Curried Chicken Casserole
Here's
how you can put that age-old cream of mushroom soup in your cupboards
to good use...
Ingredients:
1 lb cauliflower, cut into bite size pieces
2 cans condensed
cream of mushroom soup
1 cup plain yogurt
1 tablespoon curry powder
1 ½ lb boneless chicken breasts, cooked and cut into chunks
1 ½ cups shredded sharp cheddar cheese
Method:
1. Boil 2 cups of water in a large saucepan.
2. Toss in the cauliflower for a minute or until crisp-tender.
3. Preheat the oven at 350 degrees F.
4. In a large bowl stir together the soup, curry powder, and yogurt.
5. Place the chicken in a 10x9 baking dish with the cauliflower layered
on top. Pour the soup mixture over the chicken
and top with the shredded cheese. Bake for 30 minutes
until the mixture is heated and the cheese is bubbly.
