PB Fried Rice
Don't know what to do with that remaining cubed rice from your Chinese take out this weekend? Well combine it with that jar of peanut butter...

Ingredients: serves 4
2 pints white rice
3 tablespoons peanut butter (chunky or smooth)
1 10 oz box frozen mixed vegetables
2-3 eggs (optional)
1 tablespoon sesame oil

Method:
1. Add sesame oil to heated skillet on medium heat.
2. Sauté vegetables in oil for two minutes.
3. Stir in peanut butter until all of it is melted.
4. Gradually add rice and stir until peanut butter evenly coats the ingredients.

The Jiffy Method using ready-made fried rice and a microwave…
Ingredients:
2 pints fried rice
3 tbsp peanut butter (chunky or smooth)

Method:
1. Make sure all fried rice is placed in a microwave-safe container.
2. Heat in microwave for about 4 minutes.
3. Remove from microwave and then add the peanut butter and mix well.
