Tandoori
Chicken in a Jiffy
Don't have Tandoori
chicken on hand? No problem. Preparation will be a quickie with this easy
recipe. Just remember to save the leftovers!...
Ingredients:
2
cups plain yogurt
2 teaspoons
minced ginger
2 teaspoons minced garlic
2 teaspoons
paprika
2 teaspoons ground coriander
1 teaspooon salt
1 teaspoon ground pepper
1 ½ lb chicken breasts
minced cilantro
Method:
1.
Heat broiler or grill. Combine yogurt, ginger, garlic, paprika, coriander,
half of the lime juice and salt and pepper to
taste in large bowl. If chicken breasts are whole, cut
them in half. Place chicken in yogurt mixture; marinate 5-60 minutes,
as time allows.
2. To broil chicken, line baking sheet with foil for easier cleanup.
Put chicken on pan, underside facing up; reserve
any marinade that does not cling to chicken. Broil 3-4 minutes,
or until lightly browned. Turn chicken; spoon remaining marinade over.
Broil on smooth side 3-4 minutes, or until lightly
browned and chicken is just cooked through.
Sprinkle remaining lime juice and cilantro over chicken. Spoon cooked
marinade from baking sheet over chicken.
3. To grill chicken, prepare medium-hot grill. Grill chicken 3-4 minutes
per side, or until chicken browns and is cooked
through, brushing occasionally with marinade from time
to time. Sprinkle with remaining lime juice and cilantro.
4. Cut the breasts into chunks.
