Tandoori
Chicken English Muffin Pizzas
Clueless
about how to prepare leftover Tandoori chicken? Well, how about slapping
it together with a classic breakfast staple, English muffins!...
Ingredients:
4 split English
muffins
1/4 teaspoon salt
1/4 teaspoon oregano
1/8 teaspoon black pepper
1/8 teaspoon garlic salt
1/2 cup tomato sauce
1/2 cup mozzarella
cheese -- shredded
1 teaspoon grated Parmesan cheese
3/4 cup Tandoori chicken, cut into chunks
Method:
1.
Preheat oven
to 375 degrees F.
2. In a small mixing bowl, combine tomato sauce, oregano, pepper, and
garlic.
3. Arrange muffin halves on a baking sheet. Spread tomato mixture over
each muffin half. Top tomato mixture with
Tandoori chicken chunks. Top chicken with mozzarella
and parmesan cheeses.
4. Bake for 10 to 15 minutes or until cheese melts.
